While the first Hebrew city was still trying to figure out what it wanted to be when it grew up, a young immigrant couple, Zvi and Sara, opened a small kiosk on Dizengoff Street. They could not have known that somewhere between the pots of cholent and gefilte fish, they were cooking up one of Israel’s most important cultural institutions.
